Sometimes you need a really quick easy meal, but you also need to include a vegetable to assuage your guilt that you’re eating fish straight from the oven (which is a nonsense feeling, by the way - nutrition comes in all forms!).
This is probably one of my quickest and easiest include-a-vegetable recipes ever. In fact, it’s barely a recipe. It’s instructions on how to make a dressing!

Ingredients
1 box frozen battered fish, enough for your family
10 pack tortillas
Broccoli Slaw
1/2 head broccoli
1/3 cup yoghurt
1/4 cup olive oil
1 tbs lime juice
1/2 cup coriander leaves (you can swap this out for parsley or mint, if you prefer)
Salt and pepper, to taste
Method
Preheat your oven as per battered fish packet instructions. It doesn’t even need to be fish - chicken tenders, even chicken nuggets would do for this meal.
Cook the fish as per instructions. Keep them warm under foil if they finish before you’re finished the slaw.
Wrap the tortillas in foil and put them in the oven. Turn the oven off and let the tortillas warm up while you make the slaw.
Slice the broccoli into matchsticks. Separate the florets, slice the stalk (not the woody part at the end) and the florets into flat, thin slices, then slices those slices again lengthways, so that they look like matchsticks.
Finely chop the coriander leaves (or whatever herb you prefer).
Add the yoghurt. You can use sour cream or creme fraiche, if you prefer. I usually have plain yoghurt in my fridge, as it also doubles as a baking agent.
Add the olive oil. Most people have olive oil in their cupboard, but you can use a neutral cooking oil if you like, or avocado, walnut, or coconut oil for a more robust flavour.
Add the lime juice. You could also use lemon juice, or pretty much any type of vinegar. Just be careful with the stronger vinegars like balsamic or black vinegar (often used in Chinese cooking and with dumplings)
Season to taste.
Stir very well until well combined.
Serve on the table on separate plates, so everyone can make their own tacos.
Add some hot sauce and enjoy how much time you saved on making this delicious dinner. You can also make a pico de gallo if you have tomatoes kicking about.
